Top 5 Spring Inspired Healthy Snacks...All Under 15 Grams of Carbs

If you’re looking for a great way to satisfy your between-meal cravings without sending your blood sugar on a roller coaster ride, look no further than your local farmer’s market. Seasonal food is fresher, tastier, and more nutritious than food consumed out of season.
Below you’ll find my top five early spring snack picks to help fuel your healthy lifestyle.
- Strawberry Kabob – Alternate five fresh strawberries with cubes of feta and fresh mint leave on a skewer. Drizzle with balsamic vinegar glaze, if desired.
- Roasted Rhubarb – Remove rhubarb leaves (and the tough end) and chop them into small pieces. Drizzle with honey, sprinkle with cinnamon, and roast in a 450-degree oven for five minutes. Serve atop ½ cup of plain Greek yogurt.
- Apple Slices with Nut Butter – Top sliced wedges of an apple with your favorite nut butter. Try different combinations like Gala with almond butter, Fuji with cashew butter, or Granny Smith with peanut butter.
- Stuffed Mushrooms – Remove the stems from a handful of large mushrooms and fill them with store-bought tzatziki. Top with fresh chives.
- Radishes and Hummus – Slice up some fresh radishes and dip in ¼ cup hummus for a zesty, fiber-filled snack.
